Sooo this really doesn’t count as a recipe, more just a list of stuff I like to cram into a tortilla and call dinner, but it’s SO good. What really makes it is that simply dressed balsamic dressing. It’s kind of like a creamy balsamic and I want to take a bath in it. Ew- imagine how that would smell? Moving on- this wrap, you’ve got to make it.
Are you addicted to hummus like I am? I go back and forth with hummus, some months I go through 2 containers a week, others its more like 1 container ever two weeks but no matter how fast or slow i’m blowing through it, it’s always a staple at my house.
This is one of my favorite dinners because it’s easy, cheap, and you feel really good after eating all of those veggies! Sometimes we all over do it on the bread, cheese and alcohol and when you do that (like 2 days in a row last weekend) it’s good to hit to re-set button and pack in some extra veggies to try and undo some of the damage you’ve done. Amiright?
AND the other great thing about this is you can mix and match whatever you’ve got on hand- don’t have hummus? Than just smash up some chic peas or black beans! Don’t have green onions? Use a red or a yellow pepper! I was inspired to make this after seeing Ree’s heavenly hummus wrap on food network a few weeks ago.
Here’s how I made mine:
- 1 large tortilla
- ½ a cucumber peeled and sliced
- 1 carrot, shredded
- 1 tomato, diced
- 1 roasted red pepper, sliced
- green onions, diced
- feta cheese
- mashed beans or any type
- your favorite salad dressing, i recommend balsamic!
- warm the tortilla for 15 seconds in the microwave or in a skillet
- spread the tortilla with the smashed beans and hummus
- top with veggies, dressing and a drizzle of dressing
- roll it up and enjoy!
