Breakfast is my favorite meal. I could eat breakfast for every meal, if given the chance. Part of that has to do with the large umbrella I have placed over breakfast. You know, the umbrella of ‘types’ of foods one can consume between the early hours of the morning and noon. For me, its anything from waffles topped with pulled pork, to avocado toast, to green smoothies and I even go as far as considering cake as an acceptable breakfast on certain days. Leftover pizza anyone? I said acceptable, not healthy. Really I think if given the right twist, almost anything can be considered breakfast food. I luh you breakfast.
And while my love for breakfast goes to the moon, the stars, and back again a million times, lately I’ve totally been slacking on my breakfast game. My breakfasts have consisted of a granola bar while running out the door, a few of those mini vanilla bean scones from Starbucks (those things are addicting) and always coffee. Last week I made a slice of toast, shmeared hummus on it, wrapped it in a paper towel and ravenously shoveled it into my mouth as I walked to work. Hi, neighbors. On my good days, I’ll get my butt out of bed with enough time to make a green smoothie.
But recently, I got myself on track. I made myself to breakfast above and actually sat and ate it. Sipped my coffee, instead of guzzling it and burning my mouth. Slowly ate my egg sandwich, and really enjoyed it. Taking the time to make myself breakfast, just me, myself and I, was such a treat. I know we are all much more likely to take time for breakfast when we are cooking for friends or family but to do this just for oneself, was really a great way to start the day. Take the time to do special things, just for you, you really do deserve it.
