My new favorite breakfast! Lunch or dinner too. This heirloom tomato toast doesn’t discriminate.
Excuse my stubby nails. Someone call the manicure police! So these toasts- sweet, refreshing, summer tomatoes mixed with a creamy Greek yogurt sauce on top of your favorite bread- it’s all you need in life really.
Here’s how I did it:
Toast your bread. While that’s happening, make you Greek yogurt spread.
1 8oz container of 0% Greek yogurt. I used fage.
2 garlic cloves minced
2 tablespoons of mayonnaise
4 tablespoons of chopped basil
1 teaspoon each of dried dill, red pepper flakes, onion powder and mustard of your choice
2 tablespoons of flavored liquid: think veggie stock, chicken stock or white wine (choose the wine, please)
salt & pepper
Mix, mix mix. Set in the refrigerator for 10 mins to let the flavors get to know each other.
Slice your tomatoes and top them with a little sprinkle of S&P.
Build your toast: smear of Greek yogurt sauce, a few greens so we can feel good about this, and top with tomato. If you want to go nuts you could even top it with a runny egg!
