Soooo this isn’t even a recipe. More so just a list of how-to, but it is delicious! Last week here in Baltimore, we were having some semi-fall like weather, kinda chilly in the mornings and only getting up into the lower 70’s during the day, which for Baltimore in May is really unusual! Usually we’re sweating our fanny’s off by this time of year. So when it was feeling kinda fallish, and I notice I had some apples dying on my kitchen counter, I put two and two together and made this!
It’s pretty much one BIG pancake, pancake pie if you will? It can probably serve 4 people normally, two obnoxiously.
Here’s how I did it:
Slice up two apples, mix with 3 tablespoons of brown sugar, a bunch of cinnamon and a little bit of lemon juice. Toss that in a pan with a few tablespoons of butter until it’s bubbly and the apples are soft. While that’s happening, mix up your favorite pancake batter recipe. I totally cheated and used a store bought mix! When the apples look like they have softened up, pour the batter over the apples, in the same pan. Cook on the stove top for two minutes and then place the pan in the oven. Bake at 350 for 10 mins or until the batter feels firm but still soft. When it’s done and the batter is no longer runny, remove it from the oven and let it cool. After about 10 minutes, flip it over on to a plate and you’re done! You could even get fancy and make a design with the apples or which ever fruit you decide to use. Peaches and blueberries? Mixed berries for summer? Doooo it.
Have this with a cup of coffee and a dollop of Greek yogurt on top and you’ve got yourself a complete CAKE breakfast.
